Presenting to you - the healthy open sandwich with sweet potato chips. recipe: You will need Whole Wheat or Multigrain Bread.I used home baked (microwave) gluten free bread that also had flax and sunflower seeds. (Try reading the calorie counter when you buy bread and get one that has less than 50 gms of carbs per 100 gms). Diced onions, sweet corn or baby corn, diced tomatoes, coloured peppers (red, yellow, green), olives, paneer, tofu or chicken, Low Fat cheese, fresh or dried herbs, Honey, Musturd sauce or some homemade chutney or pesto. Sauté the vegetables in a pan or cook the chicken or protein of your choice in very little olive oil and season with salt, pepper and herbs like parsley or thyme or oregano. On a toasted slice of bread spread the sauce (Homemade honey musturd or chutney or pesto). Heap up a scoop of the cooked mixture on the bread top with some low fat cheese (I split one slice into 2, or just skip it and drizzle some chilli oil instead) sprinkle some dried oregano and microwave it for 20 seconds. For the sweet potato chips cut one scrapped sweet potato in the shape of your choice, thinner the better. In a bowl mix olive oil, salt, chilli flakes (if you like it a little hot) Mix it all together, let the chips be covered well with the olive oil. Spread them individually out on a baking tray and bake them. I honestly microwaved them for about 25 mins (turn the chips after 15 mins) and they turned out pretty good. If not then just boil it or roast it, turn it into a mash - However you like. Yummy in my tummy and super healthy too! ✌️😎❤️ As always be happy, healthy and greetings for this festive season xx
