Sameera Reddy Instagram – When we moved to Goa the one thing I knew would be a challenge to get is Sassy Saasuโ€™s Undhiyu vegetables๐Ÿ˜ฑit is such a big Gujarati tradition to make this winter dish every year that we just had to find a way and @manjrivarde did !Today we are making Undhiyu for youโค๏ธPlease try this at home it is super yummy ๐Ÿง‘โ€๐ŸŒพ
For 10 kgs – ( yes we make a huge batch but you can make your measurements Accordingly) ๐Ÿ‘‰๐Ÿผ
Purple yam/Kand 2kg
Surti Papdi 2 kg
Tender Vaalor Papdi 1kg
Surti small Brinjal 2 kg
Mixed Tender Tur and Surti Papdi beans. 2kg
Small potatoes 2 kg
2 large bunches methi leaves
2 large bunches coriander/dhaniya 
2 grated coconuts
2 large bundles tender green garlic
20 green chillies
2 tablespoons garam masala
Salt to taste
Chop methi fine. Add 5 chopped green chillies, 2 teaspoons jeera powder, wheat flour to just bind, salt. Mix well with less water. Form them within your fists. The shape the. Resembles your fist and this is why they are called Muthiyas!
Fry this in oil. Keep aside
Take same oil for the Undhyu. 
Mix coconut, coriander, chopped tender garlic, salt and garam masala. Keep aside. 
Take 2 large serving spoons in large vessel. Heat oil. Add the peeled beans and the papdis and stir fry for 5 minutes. Coat well with the hot oil. Keep aside. 
Pour another 2 large serving spoons into a large pan. Add chopped pieces of Kand and Potatoes. Layer with masala. Add brinjal layer. Sprinkle masala. Add stir fried papdi layer and few Muthiyas. Layer masala on top. 
Repeat all the layers again if required. Pour 3 tablespoons of oil on the top. Cover with heavy lid and let cook for 10 minutes. Open and gently upturn all the veggies so the bottom ones are now on top. Cover again and cook till done. 
Cook so they are well done but not mushy. 
Take a good whiff of the extraordinary fragrances that will fill your kitchens and then attack๐Ÿ˜‚๐Ÿ˜…
We liked our Undhiyu spicy so we never added sweet potato or raw bananas. You can. And absolutely no sugar or jaggery. In this the oil is also very controlled.No floating oil will be seen๐Ÿ˜†Except for the green garlic and little garam masala,there are no strong masalas used. Itโ€™s the gorgeous winter vegetables that steal the show
