DH Margarita
1.5oz. Dos Hombres Mezcal
3/4oz. Agave Syrup
3/4oz. Lime Juice
3/4oz. Roasted Poblano Puree
Pinch of Salt
Add all ingredients to a shaker tin filled with ice, shake vigorously, double strain over ice in a rocks glass. Garnish with a lime wheel and *optional smoked rosemary sprig.
*Roasted Poblano Puree: High flame on gas stove. Add poblano directly over flame, allow skin to bubble and blacken (2-3 min on each side), flip every few minutes, DO NOT allow to catch fire or turn to white ash, remove charred poblano and place in a small ice bath to cool, remove skin and discard, cut to remove stem, seeds and ribs; add to food processor, pulse until smooth.
*Smoked Rosemary: Carefully smoke the end of rosemary sprig with a kitchen torch and blow out after a few seconds for extra essence. | Posted on 12/Mar/2021 00:52:29
