Courteney Cox Instagram – Cacio e Pepe

•Spaghetti
•Whole peppercorns
•Pecorino cheese
•Kosher Salt

1. Salt the pasta water
2. FINELY grate a bunch of Pecorino cheese
3. Heat skillet and roast peppercorns until popping
4. While pasta is boiling, put aside 2 cups of the boiling pasta water
5. Finely grind pepper in a mortar and pestle
6. When pasta is al dente, don’t drain but use tongs to transfer spaghetti to another warmed pot. Add cheese while continuously stirring. Add pasta water to get the right consistency.
7. Put on warmed plate and top with a generous amount of pepper.
8. Salt if needed
