Stephen Satterfield Instagram – A recurring question in the last few weeks has been about the best thing I ate while filming. Of course that is an unreasonable query so I change my answer according to how I’m feeling at the moment. What I can say with certainty is that these plantains cooked over coals were incredible. Crispy and chewy caramel smoke. Mmmm. I tend to revere simplicity in all things and this dish was unforgettable.
