Courteney Cox Instagram – The BEST gluten-free/ sugar free (monk fruit) banana bread
– 3-4 very ripe bananas
– 1 stick of melted salted butter
– 1 cup of 1 to 1 gluten free flour
– 1 teaspoon baking soda
– 1.5 teaspoons baking powder
– 1 teaspoon vanilla
– 2 eggs
– 1/3 cup monk fruit
– 1/2 teaspoon of salt
– 1 teaspoon cinnamon
Bake at 350 for 40 to 45 minutes. Could even be a little longer. Check the center with a toothpick or knife.
Should come out clean.
