I love cooking. It’s a great outlet to be creative and the final product is delicious. Last summer I received a ton of messages asking for my lentil soup recipe that I cooked last season in the Big Brother house. I basically saved @tylercrispen2 ‘s life when he came off slop. So here it is… Ingredients: 6 cups of vegetable broth 1 pound of red lentils 3 tablespoons of olive oil 1 tablespoon of minced garlic 1 large chopped onion 1/2 teaspoon of cayenne pepper 1/2 cup of chopped cilantro (optional) 3/4 cup or fresh lemon juice (optional) Cooking instructions: Heat olive oil in a skillet over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 3 minutes. Add vegetable broth and lentils and bring to a boil in a large pot over high heat, then reduce heat to medium-low, cover, and simmer for 20 minutes. Keep boiling lentils until they are mushy add broth as needed but don’t lose the thick consistency. (Tip: Use Trader Joe’s canned lentils for shorter cooking time) Serve. Add a little lemon juice and cilantro for a zesty fresh flavor.
