Stanley Tucci Instagram – Zucchini / Courgette Fritters – Felicity grew some gorgeous zucchini/ courgettes in our garden this year so I put them to good use and these were devoured in seconds! ⠀ ⠀ – Grate 1 zucchini finely ⠀ ⠀ – Clean the flowers gently and chop finely ⠀ ⠀ – Salt the zucchini (not the flowers) and squeeze out any excess water ⠀ ⠀ – Whisk 1 egg yolk and add to zucchini and flowers⠀ ⠀ – Add a table spoon of flour and some salt and mix well⠀ ⠀ – Add some grated parmesan and more flour if needed ⠀ ⠀ – Heat a pan with oil ⠀ ⠀ – Add a spoonful of the mixture to the oil and flatten with the back of the spoon. ⠀ ⠀ – Fry until golden ⠀ ⠀ – Sprinkle with some extra Parmesan⠀ ⠀ – Devour. ⠀ ⠀
