Suran is a yam and grows underneath the ground. It has amazing properties and is a good carbohydrate source and great for the skin ! Kids loveee the burgers π try this and let us know what you think !
Suran Burgersπ
200 gms peeled and diced suran
200 gms peeled and diced potatoes
Salt.
Rub the salt well over both and steam cook until soft.
1 finely chopped onion
Two tablespoons ground ginger
1 tablespoon ground green chilli
1 teaspoon jeera powder
1 small cup chopped coriander
1/2 teaspoon sugar
Salt to taste
Burger Buns
Lettuce leaves
Rings of onions and tomatoes
Two slices soaked and squeezed bread
ππΌ Dice the suran into cubes ( please use oil on the hands while cutting , it may cause itchiness) then steam the potatoes & suran
( use a dish while steaming so water does not enter the vegetables) Mash the suran and potatoes and add all the ingredients. Shape them into pattice and shallow fry !
Toast the buns, add butter and lettuce leaves. Onion rings and tomatoes.

Suran Sabzi
Suran is allowed on fast days and makes a great sabzi.
200 gms Suran
200 gms potatoes
Dice , spread salt and steam cook together.
4 tablespoons ghee
2 tablespoons jeera
3 tablespoons ground ginger/green chilli paste
1 cup peanuts
Chopped coriander
Grated coconut
In a kadhai, heat the ghee. Add green chillies and ginger paste. Add jeera and let it splutter. Add peanuts, slightly crushed and toss. Add the cooked suran and potatoes. Add salt. Cover and let simmer on a low fire. Give it a good mix. Add coriander and coconut and switch off.
This is healthy and perfect for those fasting days as it gives a feeling of fullness. With rajgira puris and some curd, it is delicious! Enjoy π
