Ned Fulmer Instagram – This is possibly my favorite dessert in the Date Night Cookbook! It is a family recipe that Ariel’s dad makes a bunch and it’s so colorful and fun with the Fruity Pebbles. The cake is dense and luscious and it’s so fun to poke a bunch of holes and watch it absorb all the milk. Looking for a holiday gift? Here’s the recipe,
INGREDIENTS
1 stick unsalted butter
1 cups granulated sugar
4 large eggs
2 ⅔ cups all purpose flour
1 ½ teaspoons baking powder
1 teaspoon kosher salt
2 cups, plus ¼ cup fruity pebbles cereal
2 ⅓ cups heavy cream
1 can evaporated milk
1 can condensed milk
INSTRUCTIONS
Preheat your oven to 350°F (180°C).
In a large mixing bowl, use an electric hand mixer to beat together the butter and sugar until pale and fluffy, about 2-3 minutes.
Beat in the eggs, one at a time.
Add in the flour, baking powder, and salt, mixing together until there is very little flour visible.
Sprinkle in 2 cups of the fruity pebbles, using a soft spatula to gently fold into the cake batter.
Pour cake batter into a parchment lined 9 x13 inch cake pan and bake for 20-25 minutes or until the center comes out clean when tested with a toothpick. Allow to cool to room temperature.
While the cake is cooling, in a mixing bowl whisk together ⅓ cup heavy cream, evaporated milk, and condensed milk.
Use a fork to poke holes in the top of the cooled cake. Pour the entire milk mixture over the cake, as evenly as you can. Allow the cake to absorb the milk mixture for at least 30 minutes.
When ready to serve. Use an electric hand mixer to beat the remanding 2 cups of heavy cream until stiff peaks form. Spread the whipped cream onto an even layer on top of the cake, garnishing with a sprinkle of fruity pebbles on top. | Posted on 17/Dec/2021 06:17:28
