CORN SOUP:
INGREDIENTS
5 ears of fresh corn in the husks
3 Tablespoons extra-virgin olive oilÂ
2-medium leeks
8 scallions, set aside 3 scallions
2 Tablespoons dry Sherry
1 quart of organic vegetable broth
1-1/2 cups organic coconut cream
1 teaspoon kosher salt and cracked pepper
INGREDIENTS FOR THE GARNISH
1 small jalapeno, sliced thin
Sliced scallionsÂ
Red pepper chili flakes
Extra virgin olive oilÂ
Balsamic glaze (available at food markets and Amazon)
finely chopped basil, Italian parsley and chives
DIRECTIONS
Heat a medium size stockpot over medium high heat for 30 seconds.
Add olive oil, leeks, and cut up scallions. SautĂ© for five minutes.Â
Add the sherry, remaining corn kernels, salt, pepper and mix well. Â
Add the vegetable stock, coconut cream, stir. Now add those three corn cobs you set aside. Cover with lid and bring to a boil, lower heat and simmer 30 minutes.
Remove corn cobs.Â
Pour the soup into a blender and blend for one minute until smooth and creamy.
Add the 1-1/2 cups of the fresh corn kernels…serve hot or cold top with garnishes.Â
