2-15oz cans blk eyed peas drained
1-15oz can blk beans drained
2C of corn
1c red onion minced
1 small green bell pepper diced
1 small red bell pepper diced
1 jalapeño seeded and minced
5 garlic cloves minced
1/4c chopped cilantro
3 scallions sliced thin
4T olive oil
2T red wine vinegar
2t kosher salt
