Jock Zonfrillo Instagram – My trip to Sicily last month inspired this dish. I made pesto alla trapanese, or Sicilian pesto, to go with @25.degreessouth Baby Spinach and Feta Ravioli.
I used yellow tomatoes, blanched almonds, and a mix of mint and basil, so it’s different to the more traditional basil/pinenut pesto you normally see.
