Courtney Ford Instagram – I’m so proud of this gluten-free pie crust! 🥰 All butter, no shortening, and the secret ingredient? Yogurt! Surprise omission? Ice water! There is no ice water, or any added water in my gf pie crust, because all the moisture you need comes from the yogurt! 

If you can eat regular yogurt, Greek works best, but if you’re like me and can’t digest cow’s milk, never fear! This recipe is made with sheep yogurt! Fresh, clean and bright tasting, with none of the “goatiness” of goat yogurt, sheep yogurt is a dream, and Bellwether Farms can be found all over the US. For you Canadians- try Shepherd’s Gourmet.

Once the ingredients are incorporated, the mixture will look crumbly. Don’t freak out and reach for the ice water! I use Bob’s Red Mill 1-1 gf flour and it is by far the best gf flour for pastry imo, but ice water makes it angry, and you won’t like it when it’s angry. So, take a deep breath, and just keep working the mixture together with your hands until it comes together. It will, I promise. 

In her fantastic new book #PiesAreAwesome, @thepieous creates dough balls, and she is definitely the pie expert, but I always gather my dough and flatten it into a single disk before letting it rest in the refrigerator and rolling it out. You can do what works for you!

This recipe is so buttery flakey good, that your friends and family will never guess it’s gluten free. I’m serious. I started this gluten free journey to help my son enjoy the same treats as his non-food allergy having friends, and after trying our fair share of gritty, crumbly, dry, tasteless baked goods, I gave up the search and started experimenting in my own kitchen.
