My take on chicken curry!
Ingredients:
Coconut Oil – 2 tbsp
Fenugreek seeds – 1 tsp
Cinnamon stick – 1
Cloves – 2
Elaichi/Cardamom – 2
Onion – 2 (big, sliced)
Ginger and garlic – a handful (chopped)
Green chillies – according to taste
Powders – Turmeric, Chilli, Pepper, Coriander, Chicken masala, Garam masala
Tomato – 2
Potato – a few (washed, diced)
Chicken – one
Salt – according to taste
Curry leaves – a sprig
Jaggery – a pinch
Coriander leaves – a handful
Now the brown block thingy that you see in the video –
That’s fresh coconut dry roasted and grinded and made into a paste and frozen in cubes for ease of use. These cubes can be used in all varutharacha curries! 😉
Enjoy this curry with appam, puttu, puri, kerala porota, ghee rice, pathari or anything you like!♥️

Easy peasy salad recipe:
Extra virgin olive oil- 2 Tbsp
Balsamic Vinegar- 1 Tbsp ( if not available use lemon juice)
Honey- a few drops ( use a lil more if you like tangy and sweet flavor in your salad like me)
Salt and pepper- a pinch
Cranberries and walnut- as needed ( you can use any nuts here also raisins as substitute for cranberries)
Feta cheese- as per taste ( so if feta is not available you can use Parmesan or fresh mozzarella or even burrata) but feta makes it better! 😉
PS: This a very versatile base of the salad. You can add chicken or shredded fish or boiled egg or even quinoa to make it a protein rich complete meal!
