Debbie Matenopoulos Instagram – I have been on a Watermelon Sugar high all summer long. I have literally eaten watermelon almost every day since summer started 🍉😋. I just love it. So I wanted to make a watermelon cake. Which is not really a cake at all, but more of a watermelon sculpture in the shape of a cake with some berries around it to be honest. But it’s fun and it’s beautiful and it’s a conversation piece at a BBQ. Full discloser: making this cake is very messy especially if your watermelon is exceptionally juicy like mine was. Also make sure to use the appropriate knife because cutting a watermelon like that is not easy. But it’s worth it because it’s a showstopper. And each one is unique and comes out a little different.
