I’m here for the 15th Emirates Literary Festival and my fans from India heard I was working with the chefs on my vegan tasting menu for my dinner on February 3rd @emirateslitfest @intercondfc The least I could do is salute them from the balcony. 😂 It’s nice to be chef! Who would have ever thought that one day this cook would be sitting with HE Mariam Almheiri, UAE Minister of Climate Change talking about food security policies in the UAE and the urgent call to action to transform the global food system. I didn’t learn this overnight, I was lucky to be put under the wings of the incredible team #resilentcities and working on their Urban Eats Campaign on a more circular food system.
