50 ml reduced champagne
10 ml lemon juice STRAWBERRY MOUSSE
1 1/2 leaves of gelatine
220 g Ivoire 35 % from Valrhona 100 g strawberry purée 10 ml lemon juice
220 ml heavy cream GLAZE
3 leaves of gelatine
75 g Ivoire 35 % from Valrhona 
50 ml heavy cream 
25 ml water
75 g sugar 75 g glucose syrup
