Indy Srinath Instagram – Hoshigaki {dried hachiya persimmon} is not for the fickle forager.
I’ve experimented with using fuyu persimmon(not as tasty!), speeding up the drying time (too chewy!), and omitting a vodka spritz(mold!), all of which have resulted in subpar sweets.
So this recipe is for folks who have patience, practice, and persimmons.
