Chef Lovely Instagram – I needed a creamy & decadent garnish for my financier cake and this crémeux was perfection! Crémeux is crème anglaise emulsified with dark, milk or white chocolate. It’s incredibly stable which means you can use this on EVERYTHANG! Brownies, cupcakes, French toast, tarts, macarons, cakes, cookies.. Or serve it as a dessert on its own 😋 #LoveYouLetsEat
Double Chocolate Crémeux
Ingredients
1/2 c plus 3 Tbsp whole milk
1/2 c plus 3 Tbsp heavy cream
2 eggs
1 Tbsp sugar
Pinch of salt
1 tsp vanilla bean paste
1/2 c dark chocolate, shaved
1/2 c milk chocolate, shaved
In a heat proof bowl whisk together the milk, cream, eggs, sugar, and salt until we’ll combined.
Place the bowl over a double boiler and constantly whisk until the mixture reaches 165°.
Remove the bowl from the double boiler and whisk in the vanilla and both chocolates until smooth.
Pour mixture into a shallow dish and cover with plastic making sure the plastic is touching the surface of the mixture. Pop it in the frig for 8 hours. Overnight is best.
Use this deliciousness however you like. An easy and elegant dessert is a scoop of crémeux with fresh berries and a dollop of whipped cream. Serve with a glass of champagne or prosecco.
