Halloween is coming and here in Austria they say “A pumpkin a day keeps the goblins away!” In our part of Austria we can just go to a pumpkin field pick one and leave the money as displayed by the farmer in a little money box. The farmer-customer trust is as heart warming as a spiced pumpkin latte and no one breaks that trust this side of the world !! After you are done cooking the traditional Austrian pumpkin soup with the pulp the real treasure are the Austrian pumpkin seeds from our state STEIERMARK/ STYRIA. These are not your ordinary pumpkin seeds as these are significantly higher in nutrients than any other variety of seeds.( B-vitamins, vitamin E and K, potassium, magnesium, manganese, phosphorus, iron, zinc, selenium, and copper) Austrian pumpkin seeds come from Styrian pumpkins and are unique because about 100 years ago, these seeds lost their wooden shell due to a mutation. Only a tiny silver-colored membrane protects the seed, making the entire seed edible. I personally take humongous advantage of living in Austria and eat Styrian pumpkin seeds with almost everything including drizzling the dark Green oil which comes from these seeds on all my salads. It’s called “Kernel Öl” in German and has been famously Christened as “Green Gold” due to its many nutritional optimisations.
