Mark Wright Instagram – Be careful what you wish for 😂💨

This is just one of the hundreds of recipes on our @_livewright_ coaching app. Signing up though means your entire meal plan gets tailored to you and your goals. So if you want to put on muscle or lose fat but you don’t like onions or you’re a vegan then we would build a plan around exactly that. 

INGREDIENTS: 
2/3 cup peanut butter (melted)
1/2 cup honey
1 tsp coffee extract (could swap this for vanilla) 
6 lightly salted rice cakes

100g dark choc (70% is great) 
2 tsp coconut oil
Flaky sea salt to top

METHOD:
1. In a bowl, mix together the peanut butter, honey, and coffee extract until smooth. Crumble in the rice cakes and mix. 
2. Line a cake tin with parchment paper and then use a spoon to press the rice cake mixture tightly into the pan, ensuring it’s evenly distributed. Place in freezer to set. 
3. Melt the chocolate and coconut oil together (I did mine in a pyrex dish over a pan of boiling water) until smooth and glossy. 
4. Remove the base from the freezer and pour the melted chocolate on top. Spread until it evenly coats the rice cake mixture. Sprinkle with flaky sea salt. Transfer back to the freezer for 30-40 mins, or until chocolate is set. I then added a bit more sea salt.
