A Sicilian Lemon Tart featuring the limited-edition spatula I designed with Rani Rose for @nokidhungry x @williamssonoma! 🍋💛 Help end childhood hunger in America by purchasing one using the link in my bio. Each spatula purchased can help provide 40 meals for kids and teens! Recipe below👇
Crust:
1/4 cup olive oil
1 1/2 Tbsp Ground Almonds
1 1/4 cup all-purpose flour
1/4 vanilla bean sea salt
1 egg yolk
Custard:
Juice of 3 lemons
Zest of 1 lemon
6 oz. Cane sugar
2 Tsp cornstarch
2 egg yolks
2 whole eggs
2 oz of unsalted butter, cubed
2 Tbsp olive oil
1. Mix all ingredients for the crust in a bowl. Should be crumbly, but come together,
2. Press into the tart pan and bake at 350F for 15 mins. Let cool while you work on the custard.
3. Combine all ingredients for the custard in a medium sauce pan, EXCEPT FOR olive oil and butter, on medium heat. Stir until thickened.
4. Remove mixture from heat then stir in olive oil and butter until melted.
5. Pour the custard mixture onto the tart crust.
6. Refrigerate for 2-3 hours. Garnish with fresh citrus and mint.
