Michael Voltaggio Instagram – @bryanvoltaggio and I have been cooking long enough that the once hyper modern technique of spherification is now retro. avocado confit in a low temp oven in onion oil, the “pit” is a black garlic vinaigrette sphere, lemon gel, sea bean powder. maybe gonna serve with a nice piece of crusty toast.
