Anshula Kapoor Instagram – TEN MINUTE SESAME SCALLION NOODLES!
With over 8 million views, this is one of my most popular noodles recipes and when Anshula came over for lunch with a 🍜 craving, we knew we had to recreate it !
You can use any noodles you like – we used 100% buckwheat soba as a healthier, protein-rich option! These are so fun to seriously so comforting, so make them now and thank us later 🤗 Recipe below serves two-four👇
Cook noodles of choice; drain and reserve the starchy cooking water.
In a heat proof bowl, mix together:
– 3-4 cloves of garlic, minced
– Small knob of ginger, finely grated
– 1 tbsp gochugaru (crushed red chilli flakes) or chilli flakes/ paprika
– 1 tbsp sesame seeds
– 1/3 – 1/2 cup scallions/ spring onions
Pour 3 tbsp hot oil on top and let it sizzle. We added 2 tbsp sesame oil + 1 tbsp neutral-flavoured avocado oil.
Give it a mix, then stir in:
– 3 tbsp light soy sauce
– 1 tbsp dark soy sauce
– 1.5 tbsp rice vinegar
– 1.5 – 2 tbsp sesame paste
– 1/2 – 1 tbsp peanut butter (optional; can omit altogether or swap in miso and/or gochujang)
Stir it will, then add a splash of the starchy noodle water. Mix until your sauce comes together.
Feel free to adjust according to preference, for instance adding more sesame or peanut butter for a nuttier sauce etc. We added a splash of lime juice for a zing!
Pour the sauce over the noodles and serve garnished with sliced cucumbers, scallions and/or sesame seeds
