We’re a week out from Easter and I’m doing a trial run to make sure I have everything ready for a perfect family dinner next Sunday. @lidlireland Easter Deluxe range is full of quality products for a delicious meal and I’ve picked out a few of my favourites. The Lidl’s Deluxe Rosemary and Garlic Crumb Lamb Rack is unreal 😋 (see cooking instructions below) and I’m serving it with their Luxury Potato Gratin and Sprouts with Balsamic Glaze & Cranberry. Their Easter range includes other options for your family like the Deluxe Irish Lamb Leg, Buttery Roast Potatoes, Honey & Mustard Roast Parsnips, and don’t forget the Deluxe Seasonal Gravy to tie it all together. Lidl Ireland’s Master of Wine, Richard Bampfield recommends pairing your lamb dishes with the Cabriz DOC Dão Reserva or the Albariño D.O Rías Baixas, both available all year round as part of Lidl Ireland’s everyday wine range. #GoFullLidl Deluxe Rosemary and Garlic Crumb Lamb Rack Cooking Instructions – Pre-heat the oven to 160 °C / gas mark 5 – Set a large frying pan over a high heat, place the lamb rack seasoned side down and cook until golden brown – Next, quickly sear the other side of the lamb for one minute – Transfer the lamb onto a wire rack over a baking tray and cook in the oven for eight minutes – Pierce the meat with a metal skewer close to the bone – it should be warm to the touch when removed – If not yet cooked, return to the oven for a further few minutes – Once cooked, remove from the oven, cover with foil and rest for at least five minutes before serving”
