Rundown sauce made from lemongrass, garlic, tomato paste, ginger, coconut milk, and the shells of the shrimp, combined and cooked down and strained. Fresh herbs and lime zest at the end really make it do what it do — and then a kale salad on the side with grilled corns, grilled green onions, and a dressing made of feta, grilled jalapeño, lemon zest and lemon juice, and buttermilk.
