Erica Page Instagram – 🌮🌮HOW TO MAKE QUESATACOS DE BIRRIA 🌮🌮

I know making Birria can be intimidating & a lot of us don’t even try bc it’s so overwhelming when all the recipes you find online are for HUGE batches (that your abuela & Tia make lol)

I experimented & figured out the perfect recipe for a family of 4. All the details are listed below.

INGREDIENTS:
• 1 1/2 lbs brisket meat
• 1/2 large onion
• 10 cloves garlic
• 5-6 bay leaves (depending on size)
• 10 Chile Guajillo & Puma
• 1 Chile Ancho & Chile de árbol to your liking (the more you add -the spicier it will be)
• 1 inch piece of cinnamon & fresh ginger
• 2 cloves
• Tsp of Cumin Seeds, Oregano, Thyme, & Sesame Seeds (toasted)
• 1/4 cup white vinegar
• cheese of your choice & amount to your liking
• Salt & Black Pepper to your liking & Tbsp of bouillon

CHOP & boil meat w/onion, 3 bay leaves, 7 garlic cloves, salt, pepper & chicken bouillon

SAUCE: boil all your Chiles for 15-20 minutes & cool
~Add to blender w/fresh ginger, 3 cloves garlic, cinnamon, thyme, cumin seeds, oregano, vinegar, sesame seeds, 2-3 bay leaves, salt & pepper, & 1-2 cups of meat broth

~Add sauce to meat while boiling (meat will boil a total of about 2 hours)

~Boil 3-4 Roma Tomatoes (depending on size) blend w/salt & add to mixture

~Cool & shred meat, warm tortillas 1-2 minutes (to help with breaking) then dip tortilla in sauce & cook a minute or so on each side then add cheese, meat (cilantro & onion if want) I’d use 2 tortillas tbh

~Cook each quesataco 2-3 minutes on each side till nice & crispy

~ Serve with side of the consume topped with lime, cilantro, onion & enjoy!
