Mark Wright Instagram – AD | It’s never too early to start Christmas and I’m kicking things off with @Waitrose new crumble top mince pies and Christmas Spiced Ice Cream – both are unbelievably good! Go get them in store and online now. #TimeForTheGoodStuff.
Mark Wright Instagram – CQFC🐔 aka Crispy quinoa fried chicken. The quinoa keeps the chicken from drying out so the meat is so tender and then has this amazing, healthy crispy coating. 

Ingredients:
2 chicken breasts 
1 cup plain flour 
1/2 pouch of quinoa 
Tbsp paprika 
Tbsp garlic powder 
Salt & Pepper 
Olive oil 

Method: 
1. Flatten your chicken so that it’s about 1cm thick using a meat mallet and set aside.
2. Set out 3 plates and one shallow bowl. In the bowl crack and whisk an egg. On the plates use one for your flour (mix in the herbs, salt and pepper), one for your quinoa and leave one empty for your coated chicken breasts. 
3. Take each chicken breast and dip it in the flour mixture (make sure it’s totally covered), followed by the egg and then finish with the quinoa. You might need to pat it on with your fingers to make sure it’s fully coated. 
4. In a medium pan cook the chicken on each side until fully cooked through (it took me about 3 minutes on each side as my chicken was pretty thin).
