Mehmet Gürs Instagram – Geçtiğimiz Cuma günü, Mikla’daki son hisselerimi yeni sahibine devrettim. Sistemler kurulu, ekip aynı. Yiyecek içecek, servis ve ortam her zamanki gibi şahane. Mikla’nın bundan sonra da gelişmeye ve büyümeye devam edeceğinden eminim.
 
Açıldığı Ekim 2005’ten beri, Mikla bölgedeki çağdaş lokantacılığın yolunu açarak, taşlarını döşeyerek ilerledi. Türkiye’deki mutfak mirası, üretici ve ürünlerine odaklanan araştırmalardan, bunların üst düzey lokantalarda kullanımını gururla destekleyen yaklaşımından, yerel üzümlere odaklanan ve öne çıkaran bir şarap listesi yaratmaya kadar… Yıllar içinde birçok şefin geleneklerine sahip çıkarak taze bir bakış açısıyla ileriye bakmalarını gururla izledim çünkü “Yeni Anadolu Mutfağı” kavramını ortaya attığımda hayal ettiğim tam da buydu. O zaman oyunbozan bir yaklaşım gerekliydi, bugün ise, yenilikçi ve yaratıcı bir bakış açısıyla bölgedeki gerçek üretici ve ürünlere saygı ile yaklaşılması artık şaşırtıcı bir şey değil, hatta olağanlaştı. Benim için her şeyden çok bu gelişmeyi görmek mutluluk ve gurur verici.

As of last Friday, I transferred my last shares of Mikla to its new owner. I am confident that Mikla will continue to thrive and also grow under its new ownership. The system is in place, the team is there and the food, service and setting are as stunning as ever.
 
Since its opening in October 2005, Mikla has been paving the way for contemporary dining in the region. Anywhere from the research into food heritage, producers and products of Turkey and championing their well-deserved usage in high-end restaurants to the creation of a wine list focusing on and honoring indigenous grape varietals… Over the years, I’m proud to have seen so many chefs owning their heritage while looking towards the future with a fresh mindset. This was the result I dreamt of when coming up with “The New Anatolian Kitchen” years ago. Back then, a disruptive approach was needed. Today, I’m happy to see that a fresh and creative approach respecting the real producers and products of the region is the norm.
