Brought the the US by colonists to use as fencing and a source of pectin, these guys are still surprisingly widespread across north america! Theyre originally from China and northern Korea (with the super rad “flying dragon” variety hailing from Japan!) Do you have one of these in your area? You may be surprised to see you do! Check an app like iNaturalist to see if someone in your neck of the woods has tagged one! While the rinds are fragrant, they are BITTER when raw, hence why im fermenting mine! The juice is WONDERFUL if you love sour things (like i doooo), and can be used in place of lemon juice in just about anything!
