I was in the mood for an apple grilled cheese but didn’t have bread. But who needs bread when you have English muffins?
I mixed together about 1/3 cup of mayo, 2 tsp dijon, a little bit over a teaspoon’s of maple syrup, kosher salt and pepper. I had fresh thyme on hand three that in!
Spread a bit of the mayo mixture on each half of the English muffin, layered on a slice of apple , followed by a slice of cheddar. Into the toaster oven for a bit and now I’m wishing I had another round !!!
