Chef Bae’s Butternut, Zucchini, Carrot, Sweet Potato Latkes
1 small or 1/2 of a large butternut squash, shredded
2 zucchinis, shredded
2 purple carrots, shredded
1 large sweet potato, shredded
2 eggs
1/2-3/4 cup paleo flour
Sea salt & black pepper, to taste
Olive oil, for frying
Unsweetened dairy-free yogurt or sour cream, for serving
Instructions:
Using a towel, squeeze the moisture out of the zucchini. In a medium bowl, combine all of the ingredients and form into 3-4” patties. Fry until golden and crispy. Serve the dairy-free sour cream.
Chef Heather’s Crispy Bird’s Nest Latkes:
1 1/2 pounds russet potatoes (3 to 4 potatoes), shredded
1 medium yellow onion, shredded
3 eggs
1 tbsp fresh lemon juice
2 tablespoons flour, of choice
1 teaspoon kosher salt
1/8 teaspoon freshly-ground black pepper
1 cup avocado oil, for frying
Applesauce, for serving
Instructions:
Using a salad spinner followed by a kitchen towel (Chef Heather’s secret method!) squeeze the moisture from the potatoes and onions. Combine the remaining ingredients and form into 3” nests. Fry until golden & crispy! Serve with apple sauce. | Posted on 08/Dec/2023 03:17:36
