Tim Robards Instagram – First time attempting this and it came up a treat! I’m not one for sticking to the rules and I like intuitive ‘cowboy’ cooking so here’s my loose recipe…
Chop a –
1 tablespoon of thyme
Couple cloves of garlic
1 Brown onion
1-2 small chillies
👉🏼Fry it up on a preheated/ cast iron pan with some oil
About 5 mins
(Oven around 250-300deg C)
Then add 200g of arborio or sushi rice, and 500mls chicken stock
Cool for about 10- 15 mins either with pizza oven down way low or turn off and cool around 200degC
Then-
Mix mix a handful of chopped parsley with a good lather of olive oil, squeeze of lemon and salt and pepper
Prep your prawns (I had jumbo tigers)
De- beard your mussels (somewhere between 500g- 1kg) depends size of pan
Test your rice, when it’s aaaalmost done and soaked up all liquid, add your seafood, cook another 5 mins
Fire the heat back up in the last 5 mins or so… get a little char on those prawns
Pull it out, rope with the salsa
