We met through the incredible gift of food and she never ceases to amaze me with her level of talent, perseverance, respect, hunger to learn, and aspiration for greatness. I can’t even began to tell y’all how much she has taught me and I am still learning…..from choosing the right plates, courses, sauces, garnishes, building a menu…. My menu writing skills are all because of this woman. Details matter, upholding standards, and pushing for excellence is the foundation. Cat encouraged me one day to curate countless amounts of menus. I sent them to her and she had me edit them…over and over and over and over again…and over…. And over… I learned wine pairings, aperitifs, etc … specialty requests, diets, It was a lot of work little did I know at the time that it was preparing me for my current position.
