Megan Mitchell Instagram – Lemon and Herb Grilled Chicken. Chicken is a blank canvas and often needs a delicious sauce to help make it shine. This one is super easy to make and goes well with fish, slathered on bread and even on steak. Recipešš¼ā£ā£

Ingredients:ā£ā£
⢠4 boneless, skinless chicken breastsā£ā£
⢠grapeseed oil, for drizzling ā£ā£
⢠kosher salt, to tasteā£ā£
⢠freshly cracked black pepper, to tasteā£ā£
⢠1 1/2 cups loosely packed soft herbs such as basil, thyme, oregano, parsley, cilantro and tarragon ā£ā£
⢠1 garlic clove ā£ā£
⢠1 lemonā£ā£
⢠1/4 tsp. red chili flakesā£ā£
⢠1/4-1/3 cup EVOO ā£ā£
ā£ā£
Directions:ā£ā£
⢠bring a grill up to medium high heatā£ā£
⢠to a gallon sized resealable bag add 1 breast. Using a rolling pin or the flat side of a meat tenderizer pound the breast to 1/2 inch thickā£ā£
⢠remove to a bowl and continue with remaining breasts ā£ā£
⢠drizzle with grapeseed oil and liberally season with salt and pepper. Toss to coatā£ā£
⢠grill 5-7 minutes per side or until cooked through. Remove and let rest ā£ā£
⢠to a mini food processor add the herbs, garlic, lemon zest, a large pinch of salt and pepper, chili flakes and 1/4 cup of EVOOā£ā£
⢠blitz until a chunky sauce forms, adding more oil until desired consistency ā£ā£
⢠cut the zested lemon in half and place on the grill until charred, about 3 minutes ā£ā£
