Aylya Marzolf Instagram – My favorite soup! A bunch of people have asked, and I’m finally posting the recipe!
Chop onions, carrots, & celery. Put into a heated pot with some oil and cook til the onions start to turn translucent. Add a bunch of minced garlic, and a tablespoon or tomato paste and 2 tablespoons of fresh minced rosemary. Sauté until aromatic (a minute ish). Then add 4 cups of chicken broth (or water and bullion like me), and bring to a boil! Set the soup to simmer and put a lid on for 15-20 minutes til the veggies are tender. While that cooks, take some ground Italian sausage and make cute little meatballs in another pan and once those are ready toss em in the pot. Chop up a bunch or 2 of kale and toss that in too! Then a can of white beans, and finish it off with a tablespoon ish of apple cider vinegar. I also threw in a bay leaf, and salt & pepper to taste. And there you have it.
