Just because you’re gluten free doesn’t mean you can’t enjoy allll the things!!! Challenge me to take your favorite gluten dish and make it gluten free. There’s always a way I promise!!!!

Ingredients:
– 1 cup milk (vegan or regular)
– 1/2 cup avocado oil
– 1 teaspoon salt
– 2 cups tapioca flour (tapioca starch)
– 2 eggs
– 1 1/2 cups grated Parmesan cheese (or other cheese of your choice)
Instructions:
1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with mini muffin liners.
2. In a blender, combine the milk, oil, salt, and tapioca flour. Blend until you have a smooth batter.
3. Add the eggs to the blender and blend until the eggs are fully incorporated into the batter.
4. Add the grated cheese to the blender and blend until everything is mixed well.
5. Pour the batter into the prepared mini muffin tin, filling each cup almost to the top.
6. Bake in the preheated oven for about 20-25 minutes, or until the tops of the cheese bread are lightly golden brown.
7. Remove from the oven and let the cheese bread cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
These cheese breads are best served fresh but can be stored in an airtight container at room temperature for a day or two. Reheat them in the oven for a few minutes to enjoy them warm again. Enjoy your gluten-free PĂŁo de Queijo made in a blender!
