DeVonn Francis Instagram – 🥗 Panzanella-Inspired Salad with Pear & Fennel 🥗
Giving tomatoes a rest and swapping them out for pear, apple, and fennel bc seasons change but the stale bread in my freezer stays the same! I always keep frozen bread on hand because it can become toast or crostini or in this case big hunky crumbs. If you don’t want to make croutons sub the bread for walnuts or something with substantial texture. I leave you with the gift of bringing old bread back to life.
Ingredients:
1 apple, thinly sliced
1 pear, thinly sliced
1/4 bulb of fennel with fronds, also thin!
1 shallot
a big handful of croutons
1 tsp chili flakes
generous pinch of salt
1/2 tablespoon white wine vinegar
1 teaspoons of lime juice
generous amount olive oil
a handful of herbs
Instructions:
– Tear bread, drizzle with oil, salt, pepper, and lemon zest. Bake until golden brown at 350 degrees. I rotate the pan every 5 minutes and toss the bread around to make sure heat (and therefore brown-ness) is distributed evenly. Remove from oven and set aside until you’re ready for them.
– Combine apple, pear, fennel, shallot into a bowl with spices, acids, and oil and mix to coat evenly.
– For green juice, blend 1 cup anjou pear, 1/2 red onion, 1 bunch of cilantro, 1/2 cup water, juice of 1 lime with a generous pinch of salt until smooth and then strain through mesh or cheese cloth.
– Combine apple mix with croutons and dress with green juice. fold in half of your herbs into salad and then garnish with remaining herbs. | Posted on 03/Apr/2024 17:59:49
