Makes 12-15 1.5oz balls
7c shredded zucchini
1 tbl kosher salt
½ c thinly sliced green onions
1.5 tbl finely chopped dill
1.5 tbl finely chopped mint
1tbl finely grated garlic
1.5 tbl grated lemon zest
1c panko breadcrumbs
1 beaten egg
2.5c crumbled Greek feta
Olive oil for frying
Directions
Shred the zucchini on the large holes of a box grater. Season with 1 tbl of salt and toss to combine.
Let stand 30-90 minutes, allowing excess moisture to drain then place in a tea towel and wring out all moisture. This is the most important step, as any moisture left in the zucchini will prevent frying.
In a mixing bowl combine the green onions thru feta and mix to combine. Thoroughly mix in the zucchini.
Form the zucchini mixture into 1.5oz/ ⅓c balls then coat in panko breadcrumbs and refrigerate, until ready to fry. Fry at 350-360 degree in Canola oil ½ “ over the top of the Keftedes until golden brown and crisp. | Posted on 19/Apr/2024 18:50:14
