Michael Symon Instagram – This is how I poach my eggs… you don’t have to be intimidated to try this method!!!.. it can be super simple… served on sourdough with crispy prosciutto, breakfast in 90 seconds never tasted better! 🥓🥚
Poached Egg
with crispy prosciutto
Serves 1
2 large eggs
2 slice of grilled sourdough bread
2 pieces of Prosciutto
1 tbl Champagne vinegar
Salt & pepper
Parmesan cheese to taste
Flat leaf parsley
Bring 3 qts of water to a slight boil. Add a few splashes of vinegar and salt to boiling water.
Crack each egg into a separate small dish. Swirl the water in the pot to create a whirlpool effect and add eggs one at a time to the pot. Continue to stir in a circular motion. Cook 90 seconds for a runny yolk, eggs can be simmered longer for a firmer yolk.
Crisp the prosciutto in a hot frying pan, approximately 1 minute per side.
Serve over grilled bread and top with crispy prosciutto, parmesan cheese, salt/pepper, flat leaf parsley and drizzle of extra virgin olive oil. Enjoy. | Posted on 10/Apr/2024 18:51:31
