Briony May Williams Instagram – #AD Need a gorgeous flapjack recipe?! Look no further! I was lucky enough to whip up some delicious flapjacks recently with ‘Bee Kind’ honey from 2 hives thriving on the rooftop of the @kyocera_document_solutions_uk Reading HQ 🍯 They are incredibly proud of their hives and produce jars a year that they hand out to their customers, partners and visitors. These flapjacks are a true celebration of honey with honeycomb made with honey and honey in the flapjacks. Plus they are super easy to make 🐝 You can find the full recipe below to make your own using the honey of your choice ❤️

HONEY FLAPJACKS 
Ingredients 
Flapjacks 
225g unsalted butter 
225g light soft brown sugar 
170g honey
450g rolled oats

Honeycomb 
130g golden caster sugar 
75g honey
Pinch of salt 
½ tsp bicarbonate of soda 

To finish
50g dark chocolate, melted

Method
Oven on to 180°C fan. Grease and line a 30cm brownie tin. Make the honeycomb by heating the sugar, honey and salt in a pan until the mixture is bubbling and reaches 145°C (use a jam thermometer). Remove from the heat and stir through the bicarbonate, the mixture will bubble. Pour the honeycomb onto a sheet of parchment and leave to set for 5 minutes until hardened then bash into small pieces. Heat the butter, sugar and honey together in a pan until melted then mix through the oats. Stir through the broken up honeycomb then pour into the prepared tin. Bake for 25-30 minutes. Drizzle over the melted chocolate then leave to cool.

Briony May Williams Instagram – Kicking off the week with this Rhubarb Streusel Tart! Side note…how have I never made streusel before?!? It is SO GOOD!!! This latest installment in my super series of seasonal recipes is gorgeous to look at and tastes fab, definitely something to impress your family and friends. The pastry recipe is my Nana Pat’s passed down through the generations❤️The full recipe is below, please let me know if you give this a go! #seasontotaste
Ingredients
Pastry 
225g self raising flour
120g unsalted butter, chilled
Pinch of salt
50g golden caster sugar
1 egg, beaten   1 egg for egg wash
Frangipane
100g unsalted butter, softened
100g golden caster sugar
2 eggs
150g ground almonds
75g plain flour
1 tsp cinnamon
1 tsp ground ginger
400g fresh rhubarb
Streusel
170g self raising flour
100g light soft brown sugar
70g golden caster sugar
25g custard powder
100g salted butter, melted
Method
Oven on to 180C fan/200C. Make the pastry. Cut the butter into small cubes then place in a food processor with the flour and salt. Pulse until the mixture resembles bread crumbs (you can do this by hand, just rub the flour and butter together). Stir through the sugar then add the egg and mix together until it forms a soft dough. Cover and place in the fridge for 20 minutes. Make the streusel topping. Place the flour, sugars and custard powder in a bowl then whisk to combine. Pour over the melted butter (it should be warm not hot) and fold gently with a fork until you can’t see any more flour. Don’t overmix, as soon as the flour is incorporated, stop mixing. Place on a baking tray lined with parchment paper and bake for 15 minutes until golden brown. As soon as you take the streusel out of the oven, break it up using a metal spoon so you have a crumbly topping.Retrieve the pastry and roll out on a floured surface to a ¼ inch thickness. Line a 20cm tart tin with the pastry and prick the base with a fork. Scrunch up a piece of parchment paper then unfold it and place it in the pastry case then fill up with uncooked rice or baking beans. Bake for 10 minutes…
