Courteney Cox Instagram – Cauliflower Soup

2 med heads cauliflower cut into med size pieces
4 ribs of celery cut into med size pieces
1 med white onion cut into med size pieces
1/2 bulb fennel cut into med size pieces
1 T fresh thyme leaves
12 cups chicken or vegetable stock
1 t salt
1 T white truffle oil

Place all of the ingredients except the truffle oil in a large pot. Bring to a boil and turn heat down to med-low. Cook for 20-30 minutes until vegetables are tender. Blend in batches and slowly add the truffle oil while the blender is going. Season with salt and white pepper.
