You don’t really taste the sweet potato at all

2 medium sweet potatoes, peeled
– 1 -2 cup gluten-free flour add more as you go until it isn’t sticky anymore.
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/2 cup or more marinara sauce
– Toppings of your choice (e.g., sliced bell peppers, onions, olives, pepperoni)
1. Preheat your oven to 400°F (200°C).
2. Place the diced sweet potatoes in a pot of water and bring it to a boil. Cook the sweet potatoes until they are fork-tender, about 15-20 minutes.
3. Drain the cooked sweet potatoes and mash them in a mixing bowl until smooth.
4. Add the gluten-free flour to the mashed sweet potatoes. Knead together until well combined.
5. Top with marinara sauce, mozzarella cheese, Parmesan cheese, oregano, and salt
Bake at 400 for about 20- 25 minutes
