SWEET POTATO GRANOLA
3 cups rolled oats
1 cup raw pumpkin seeds
3 Tbsp sugar (I used monkfruit instead)
¼ tsp sea salt
1/2 Tbsp ground cinnamon
3 Tbsp chia seeds
1 cup shredded coconut
1/4 cup coconut oil (melted)
1/3 cup honey (I used Manuka Honey)
2 sweet potatoes (mash)
Preheat oven to 350 degrees F.
METHOD:
1️⃣ Boil sweet potatoes, peel, then mash
2️⃣ In a small pot over medium-low heat, add the coconut oil, honey (or maple syrup) and mix.
3️⃣ Combine with the dry ingredients and mix well with a large wooden spoon.
4️⃣ Spread the mixture evenly onto a baking sheet and bake for 35-45 minutes.
Let the mixture cool and transfer to an airtight container. The granola should keep for 1-2 weeks.
