Protein-Rich Chocolate Chip Cookies 🍪

These are grain-free, gluten-free, dairy-free, but they also taste delicious!

INGREDIENTS:
1 can chickpeas (15oz), drained and rinsed
1/4 cup maple syrup
3/4 cup plant milk (I used flax milk for added protein)
1/3 cup peanut butter
3/4 cup flour (I used cassava flour, but you can use almond flour or oat flour as well, which are also gluten-free)
1 tsp baking powder
1/2 cup dark vegan chocolate chips — I used @enjoylifefoods
1 tbsp coconut oil
1 tbsp monk fruit sugar

METHOD:

Preheat oven to 350°F

Place the first 4 ingredients in a blender/ food processor and blend until smooth.

Transfer to a bowl, then add the rest of the ingredients

Form the batter into bite-sized balls with your hands or a small ice cream scooper and place on a baking tray.

I flattened the balls out because the ingredients don’t spread like a cookie with “conventional” ingredients.

Bake for 12-15 minutes.
