Get lunch on the table in 20 mins with minimal prep and ingredients! 🔪

Ingredients – Serves 2

⦿ 1 tsp Coconut Oil
⦿ 2 Spring Onions (chopped)
⦿ 1 Celery Stick (chopped)
⦿ 100g Edamame Beans
⦿ 100g Frozen Peppers
⦿ 100g Sweetcorn
⦿ 100g Mangetout
⦿ 150g Tofu (chopped)
⦿ 400ml Coconut Milk
⦿ 2 tbsp Green Curry Paste

Method:

1. Add oil to pan and allow to help before adding in spring onions and celery to pan – stir and allow to soften
2. Add edamame beans, peppers, sweetcorn, mange tout, tofu, coconut milk and curry paste to pan – stir gently and allow to heat through for 5-10 mins – serve and enjoy! 💚
