Matt Preston Instagram – Found a gorgeous, huge and juicy celeriac at the local store at a bargain price. Made the simplest soup. Peel, dice and fry the celeriac until a little browned and softened. Same time fry sliced leeks and celery at their end of their life from the crisper draw. Reserve pale young celery leaves. Combine, add a fresh bay leaf from the garden and cover with stock. Simmer until the celeriac is soft. Remove bay leaf and blitz to silky creaminess with hot milk. Garnish as you like. I’ve used thyme, hazelnuts, bacon and those pale celery leaves.
