Ingredient List
1 package Square Bhan Tran Rice Paper
1 pound ground chicken
1 cup shredded carrots
2 tbsp ginger, minced
4 scallions, greens and whites sliced
1 tbsp garlic, minced
3 tbsp fish sauce, (we used Three Crab Fish Sauce)
¼ cup thai basil, hand ripped
Freshly cracked pepper, to taste
Filling Instructions
1) In a large bowl add raw chicken, carrots, ginger, scallions, garlic, fish sauce and thai basil. Mix together thoroughly.
Rolling Spring Rolls
1) Fill a large bowl with warm tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds).
2) Take the wrapper out of the water and lay it on a clean cutting board, so it looks like a diamond (one point of square facing you). Place about ¼ cup of filling along the bottom edge of the wrapper.
3) Fold the bottom tip over the filling and pull back towards you, making a thin log. Roll it on itself until you reach the center and then fold in the edges. Continue to roll until you reach the other edge.
Cooking Spring Rolls
1) Line a plate with a few layers of paper towels, set aside near your stove top.
2) Heat a deep skillet or pot with about 1 ½ – 2 inches of canola oil over medium-high heat for 5 minutes to bring the oil to the temperature. If you are using a thermometer, the oil should register 350 degrees.
3) To test, dip one spring roll into the hot oil. If the oil is hot enough it should bubble immediately around the spring roll. Heat oil a few minutes longer if needed.
4) Once the oil is to temp, add 3-4 spring rolls to the oil, making sure there is enough room around each roll so they do not stick together. Fry for 3-4 minutes until golden, brown and delicious.
5) Remove from oil and put on a plate with paper towels to drain. Repeat with the remaining rolls.
6) Serve over a bed of lettuce with Chili Crisp Lime Dipping Sauce. Enjoy!
