Ming Tsai Instagram – Start getting ready for summer with Chef @Mingtsai’s Shrimp Pineapple Summer Rolls! ☀️

INGREDIENTS
1 package vermicelli rice noodles
1 pound small shrimp, deveined/shells and tails removed
2 tbsp garlic, minced
2 tbsp ginger, minced
4 scallions, green and white slice and separated
½ lime, juiced
1 tbsp fish sauce
¼ cup thai basil, hand ripped
1/2 pineapple, cut into 4” x ¼” spears
1 package Bahn Trang rice paper spring roll wrappers
3 tbsp neutral oil, like grapeseed
2 tsp olive oil
Kosher salt and freshly ground pepper

INSTRUCTIONS
1) Add rice vermicelli to a large bowl and cover with boiling water. Let sit to soften.
2) Meanwhile, heat a non-stick skillet on medium-high heat, add 3 tbsp of neutral oil to the pan. Once hot add garlic, ginger, and 2 tbsp scallion whites. Cook, stirring constantly for 2 minutes. Season with S&P.
3) Add 2 tsp of olive oil to the pan and add shrimp in an even layer. Season with S&P, cook 1-2 minutes until shrimp start to turn pink. Flip over and let shrimp cook for about 2-3 more minutes until they are pink throughout. Remove from heat and place them in a bowl, allowing them to come to room temperature.
4) Strain noodles. Add back to a separate bowl, and let this come to room temperature. Once cooled, use kitchen shears to cut the noodles to break up the long pieces. Add thai basil, lime juice, fish sauce, and 2 tbsp of scallion greens.

ROLLING INSTRUCTIONS
1) Fill a large bowl with hot tap water about ⅔ of the way up. Dip wrapper in water and allow to get malleable (about 30 seconds).
2) Take the wrapper out of the water and lay it on a clean dish cloth. Line up ¼ cup of noodles along the bottom edge of the wrapper, place 2 spears on either side of the noodles. Then add 3-4 shrimp on top of the noodles.
3) Fold the bottom edge over the filling and pull back towards you. Roll it on itself and fold in the edges. Continue to roll until you reach the other edge.

DIPPING SAUCE

Dipping Sauce Ingredient list
½ lime, juiced
2 tsp Sambal Oelek Fresh Ground Chili Paste
1 tsp fish sauce
1 tbsp scallion greens, sliced
